Here is the history of the traditional Classic French Cassoulet

The history of cassoulet is a history of Languedoc in South West France. One legend places the birth of cassoulet during the siege of Castelnaudary by the Black Prince, Edward the Prince of Wales, in 1355. The besieged townspeople gathered their remaining food to create a big stew cooked in a cauldron.

The modern Cassoulet has been elaborated over the centuries and can be quite a complex recipe. The Classic French dish consists of white beans baked with meats usually chicken or duck with sausages either whole or sliced into bite size pieces. Flavoured with a bouquet of Herbs de Provence. A traditional hearty family meal. The Casselout is now found worldwide and each country has it’s own variation, but the true classic Casselout is the French recipe.
